GRAPE VARIETY: Pinot noir
ORIENTATION: Middle of the hills, South-East, low slope with a brown soil on silt, covered by ancient alluvial deposits.
The ground is not very compact, which permits a deep rooting.
This wine is quite close to a POMMARD, due to its strong character enhanced by its well marked tannins.
Our VOLNAY 1er CRU “Les Mitans”, when young, develops aromas of red fruit and wood, then after 5 or 6 years of maturing, the aromas of prune and candied fruit will increase to let the wine fully express itself
The robustness of this wine is looked for to accompany big game ( wild boar, roe deer or red deer) and strong cheese (Epoisses or Bleu d’Auvergne)
AGEING: Of a great cellaring potential, this wine can be kept from 15 to 20 years.
